Ü CANTIN – Maccaia sweet white wine
One of the finest indigenous vines with typical peculiarities , well known in ancient times but unfortunately little appreciated in more recent ones, with the risk of being permanently forgotten, recovered thanks to a project of the Valfontanabuona mountain community with the collaboration of the province of Genoa . Cimixia is a grape that produces little, yields little, is very delicate with a very thin skin, but it is good because it is very sweet and it was used in the past as an “improvement” in bianchetta and vermentino to increase the alcohol content. In purity it is used to make a good passito with the characteristic aroma of chestnut honey.
